Golden Yellow Cake:
1 cup soft butter
2 cups sugar
4 egg yolks
2 2/3 cups sifted cake flour
3 tsp baking powder
1 tsp salt
1 cup milk
1 1/2 tsp vanilla
4 egg whites

Butterscotch Filling:
1 cup brown sugar
3 tbsp flour
pinch salt
1 cup milk
2 egg yolks, lightly beaten
2 tbsp butter
1 tsp vanilla
1/2 cup chopped walnuts

Boiled Icing:
1/2 cup sugar
2 tbsp water
1/4 cup corn syrup
2 egg whites
1 tsp vanilla

Butterscotch Glaze:
1/4 cup brown sugar, packed
3 tbsp butter
2 tbsp water

Cake:
Preheat oven to 350. Grease generously and flour 3 8" or 9" round cake pans, at least 1 1/2" deep.

Cream butter until light and fluffy. Add sugar gradually, creaming well after each addition. Continue beating until fluffy. Add egg yolks, one at a time, beating well after each addition. Sift flour, baking powder and salt together. Combine milk and vanilla. Add sifted dry ingredients and additional liquid to creamed mixture, stirring until blended after each addition and beginning and ending with dry ingredients. Beat egg whites until stiff but not dry and fold into first mixture. Pour into prepared pans.

Bake 25 to 30 minutes or until tops spring back when touched lightly in the centre. Cool in pans about 5 minutes, then turn out on cake racks.

Butterscotch Filling:
Combine sugar, flour and salt in saucepan, stirring to blend well. Add milk gradually, until smooth. Set over moderate heat and bring to boil, stirring constantly. Boil 1 minute. Stir at least half of the hot mixture gradually into egg yolks. Pour back into pan and return to heat. Bring back to a boil, stirring constantly. Boil 1 minute. Remove from heat. Stir in butter, vanilla and nuts. Cool.

Boiled Icing:
Combine sugar, water and corn syrup in small saucepan. Bring to a boil and boil hard without stirring to 242. Beat egg whites until stiff. Pour hot syrup in thin streams into egg whites, beating constantly. Continue beating until stiff peaks form. Blend in vanilla.

Butterscotch Glaze:
Combine all ingredients in small saucepan. Bring to a boil and boil hard 1 1/2 minutes without stirring. Cool slightly.

Assemble the Cake:
Prepare cake as directed. Between each layer, add butterscotch filling, topping each layer with a layer of sliced bananas. You will need 2 medium bananas. Ice sides and top of assembled cake with boiled icing and drizzle butterscotch glaze around edge of top allowing it to run down sides.
