4 chicken breasts
1/4 tsp. salt
1 tbsp. fresh sage, minced
4 think slices prosciutto
2 tbsp. olive oil
1/2 cup flour
1/2 cup white wine
1/2 cup artichoke hearts, quartered
1/4 cup lemon juice
1/4 cup heavy cream
1 tbsp. butter
2 tbsp. capers, drained

Directions:
Directions:
Lightly salt chicken, sprinkle with sage. Place prosciutto on top of the chicken and pound until breast is a little less than 1/4" thick. Then heat olive oil in a saute pan. Lightly flour chicken pressed with prosciutto. Place in heated pan, prosciutto side down. Brown on each side for 3-4 minutes, remove from pan. Drain off excess oil, then deglaze pan with white wine. Add artichokes, lemon juice, cream, and butter; cook until thickened. Place chicken on plates and pour artichoke sauce over chicken; garnish with capers.
