1/3 cup blackberry preserves/jam
1 tbsp. canned chipotle peppers in adobo,
3 tbsp. balsamic vinegar
2 tbsp. fresh cilantro, chopped
1 clove garlic, minced
1/8 tsp. pepper
3 grilled chicken breasts, cut into small chunks
2 cups Monterey Jack cheese, shredded
1/2 cup onion, diced
2 tbsp. butter
10 (6 inch) flour tortillas

Directions:
Directions:
Saute onions in butter until translucent. In another saucepan, whisk together blackberry preserves, chipotle peppers, balsamic vinegar, cilantro, garlic, and pepper. Heat until mixture begins to bubble. Remove from heat. Add chicken to sauce and toss. Heat tortilla and add onion, cheese, and chicken mixture and fold tortilla in half. Cut tortilla in half and serve.
