1 c flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp shortening
1/4 c applesauce
1/2 c sugar
1/2 c brown sugar
1 egg
1 tsp vanilla
1 1/3 c oats
1/2 c chocolate chips

Preheat oven to 375ºF. Spray cookie sheet. Whisk wet ingredients until shortening breaks into pea-sized pieces. Add dry ingredients and stir to combine. Fold in oats and chocolate chips last. Bake 10-12 minutes.

These are my favorite cookies! I believe that any recipe that calls for raisins would be much better with chocolate chips--and this one's a winner!
