1lb. pasta (penne or farfalle)
2 12-ounce jars artichoke hearts
1 chopped onion
2 T minced garlic
1/4 C olive oil
1/2 C lemon juice
1 C chicken broth
1 C white wine
2 T fresh mint or mint flakes
3/4 C chopped pistachio nuts
1/4 C Parmesan cheese.

Directions:
Directions:
Saute onions in olive oil until translucent, and add garlic for 1 min. Add wine, lemon juice, chicken broth, juice from 1 jar of artichoke hearts and the artichoke hearts from the 2 jars. Simmer while pasta is cooking until al dente (not soft). Add sauce to drained pasta and let sit for 15-20 min. Toss with mint, cheese, and pistachio nuts.
