1 1/2 cups navy beans ( or 1 can navy beans)
1 box frozen spinach
1/4 pound pork tenderloin or skinless, boneless chicken breast
2 cans of low sodium chicken broth
1 cup water
1 can ( 14.5 oz) stewed tomatoes
1 large sweet potato peeled and cubed
1 onion
1 red or yellow pepper
2 tsp paprika
2 tsp cumin
1/4 tsp cinnamon
1 tsp dried basil
salt and pepper to taste

Directions:
Directions:
Sort and rinse beans and place in slow cooker. Defrost the spinach in microwave @ 3 minutes.
Cube meat. Cut vegetables into wedges. Add all ingredients to slow cooker. Add spinach to cooker. Cover and cook on LOW for 10 hours or HIGH for 5 - 6 hours.

I omitted the meat and added lentils. I have used chicken in the past and hubby loved it.
