6-8 oz of beef strips,1/2 inch by 2 inches long with all fat and gristle removed as possible.
1/2 tsp black pepper
1/2 tsp salt
4 Tbsp butter
1/3 cup flour
2 cups of beef broth(use either cubes or Powder)
1/2 tsp dry mustard
4 oz can of sliced mushroom's(optional)
1/2 cup of sour cream
1/2 cup of white wine(Pinot Grigio)

Directions:
Directions:
1.season beef strips with 1/2 tsp of both salt and pepper.
2. Melt butter in a large skillet over med heat, Then add the beef strips about 3 minutes or lightly browned. then push the strips off to one side.
3. In a 4 cup measuring cup or a bowl mix in the 2 cups of beef broth with flour and whisk until the flour is absorbed and not lumpy. then pour into the large pan and stir while bringing it to a boil. Lower the heat and stir in the mustard, cover and simmer for 1 hour or until the meat is tender. Stirring occasionally(Don't allow to stick to bottom of pan).
4. 15-25 minutes before it is done simmering make your noodles or rice.(or just before plating non buttered toast)
5. Five minute before serving stir in the mushrooms and sour cream and white wine.
