6 boneless chicken breasts
1/3 C olive oil
3 tbsp.red wine vinegar
1 C dried apricot or prunes
1/2 C Spanish pitted olives
3 tbsp.capers drained
6 lg cloves garlic crushed
2 tbsp.dried oregano
1 tsp. kosher salt
1 tsp. freshly ground black pepper
1/2 C brown sugar
3/4 C white wine

Directions:
Directions:
Place Chicken in a lg plastic resealable bag.
In a lg. glass measuring cup, stir together the olive oil,vinegar,apricots,olives,capers,garlic,salt &pepper. Pour over the chicken,and work the marinade into the chicken. Seal the bag and refrigerate overnight.
Preheat oven to 375 degrees.
Arrange chicken in a lg baking dish single layer. Drizzle the marinade over the chicken. Sprinkle the chicken pieces with the brown sugar,and pour the wine around them.
Bake,basting frequently w/ the pan juices,until the chicken is cooked through,about 25 min.
Using a slotted spoon,transfer the chicken,olives,capers,apricots to a serving platter.
Place the remaining pan juices in a serving bowl,and serve on the side.
