1 recipe Egg Yolk Pastry
5# apples, pared, cored, sliced
4 tsp. lemon juice
3/4 cup sugar
3/4 cup brown sugar
1 tsp. cinnamon
1/4 tsp. salt
1/2 tsp. nutmeg

Directions:
Directions:
Roll out 1/2 of pastry and line 15 x 10 jelly roll pan. Sprinkle lemon juice on apples. Place 1/2 of apples in pan. Sprinkle with1/2 sugar and spice mixture. Spread remaining apples and sprinkle with remaining sugar and spice. Top with pastry. Bake at 400 for 50 minutes. When cool, drizzle with 1 cup powdered sugar with 2 T. milk.
