4 lbs. red potatoes
7 slices bacon, diced
1/2 cup sugar
3 tbsp. flour
2 tsp. salt
1/4 tsp. pepper
1 cup cider vinegar
1 1/4 cups water
2 tsp. Durkee's sauce
3 large slices onions, chopped

Directions:
Peel and cut potatoes in thin slices. Fry bacon in large skillet until crisp. Remove from drippings. If necessary, add more shortening to make 1/2 cup of drippings. Blend sugar, flour, salt and pepper. Stir into bacon drippings to make smooth paste. Add cider vinegar and water. Boil 2-3 minutes, stirring constantly. Ad Durkee's sauce to mixture. Combine sauce, potatoes and onions to skillet. Cover with a tea towel (not skillet lid) and let stand at room temperature 2-3 hours. Before serving, sprinkle with crisp bacon.
