3 lbs all-purpose potatoes, cubed (peeling optional)
1 large head garlic
5 Tbsp heavy or whipping cream
4 Tbsp (1/2 stick) unsalted butter, room temperature
1 egg yoke
1/2 tsp black pepper
salt, to taste
1 Tbsp chopped fresh italian (flat leaf) parsley, as garnish

Directions:
Directions:
Add potatoes to saucepan, cover with cold water, and bring to boil. Reduce heat slightly - cook until tender, apprx. 20 minutes.
Peel outer skin of garlic, separate cloves and add to saucepan. Cover with water and bring to boil. Lower heat and simmer until garlic is very soft - apprx. 15 minutes. Drain and allow to cool.
Drain potatoes, return to saucepan. Shake over medium heat to remove remaining moisture - apprx. 10 - 15 minutes. Set aside.
Slip skins off garlic, combine cloves and heavy cream in food processor. Puree.
Transfer potatoes to bowl/electric mixer; add pureed garlic, butter, egg yoke, pepper, salt. Beat until smooth (keep some lumps).
Garnish with parsley and serve immediately.
