3 Tbsp butter
3 Tbsp flour
1 cup milk
3 egg yolks, beaten
tsp salt
1 cups shredded cheddar cheese or colby cheese
6 egg whites

Directions:
Directions:
Melt butter over a medium heat in a medium sized sauce pan.
Add flour, a tbsp at a time, stirring constantly. Gradually add milk and stir constantly until sauce thickens.
Add egg yolks and salt and stir. Add cheese and stir until melted. Allow sauce to cool slightly.
Fold into egg whites which have been beaten stiffly but not dry.
Pour into a 1 quart ungreased souffle dish, folding a few times.
Bake in a preheated 350-degree oven for 40 45 minutes.
