4 c. Vodka
Zest of 10 lemons, no pith at all.
2 1/2 c. Sugar
3 1/2 c. Water

Directions:
Directions:
Put vodka and lemon zest in a sealable jar (e.g., large mason jar) and place in a cool place for 1 week.

After a week, put the sugar and water in a saucepan, bring to a boil and cook for 5 minutes. Remove from heat and allow to cool. Add sugar solution to the vodka solution and let stand overnight in a cool place.

Strain through a layer of cheesecloth, pressing the solids firmly to get all the liquid. Stain a second time.

Place in a cool place (or the refrigerator) to stand for 1 week.

Serve very cold!

This is a wonderful Italian after dinner drink. Serve in small aperitif glasses. And it is a great beverage to make and give as gifts.
