16oz Elbow Macaroni
1/3 C. Flour
1/2 C. Butter
4 C Milk
2 Eggs
18 oz. Shredded sharp cheddar cheese or combine other favorite cheeses (Gouda, Monterey Jack)
1 tsp Salt


Directions:
Directions:
Cook macaroni according to directions, drain and set aside.
Meanwhile, melt butter in a saucepan and add flour and salt stirring and adding milk gradually stirring continuously until thickened.
In separate small bowl, slightly beat eggs and then slowly add in some of the warm white sauce until eggs are incorporated into the sauce at a warmed temperature.
When pasta is done, drain but do not rinse.
In a casserole dish, layer a third of the macaroni, cheese then sauce and repeat with the next layer of macaroni, cheese, sauce etc etc. Lastly top with shredded cheese.
OPTIONS -Using different cheeses can make a great change use half sharp cheddar and half Gouda or one of your favorite other cheeses. Add diced ham and sliced green onions for a main course.
Bake at 350 for 35-45 minutes or until golden
