3 cups coarsely grated zucchini (about lb)
2 tsp. chopped garlic
salt and pepper
1 egg, lightly beaten
3 T. flour
oil

Directions:
Directions:
Combine zucchini, garlic, salt and pepper. Stir in egg and flour. Heat oil over medium heat in heavy skillet. Drop zucchini mixture by heaping tablespoons into skillet. Flatten slightly with back of spoon and cook until golden brown. Turn over and cook other side. Drain on paper towels. Stir mixture before cooking each batch. Add more oil if needed. Serve with Yogurt-Mint topping. (See recipe in Vegetables, Sides and Sauces.)
