3 eggs
2 cups sugar
1 tbsp. vanilla
2 cups finely grated zucchini
1/2 cup chopped nuts
1 small can crushed pineapple (drained)
3 cups self-rising flour

Directions:
Directions:
Beat the eggs until fluffy, add sugar, vanilla, grated zucchini, chopped nuts and crushed pineapple. Mix with self-rising flour. Pour into two loaf pans. Bake at 325 for 40 minutes.
