Cream together:
1/2 cup butter
1 1/2 cup sugar
1 egg

Add:
1 cup pumpkin
1 tsp. vanilla
2 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon

Can add: chocolate chips, nuts, raisins

Bake at 350 degrees for 12-15 minutes

I 3x the batch so I can use an entire can of pumpkin! These can also be made into bar cookies by patting the dough into a greased cookie sheet.
