2 deep dish pie shells
1 stick margarine plus 2 tbsp.
1 can cream of chicken soup
3 eggs
3/4 cup milk
2 cups shredded cheddar cheese
4-5 Vidalia onions ( cut in medium chunks)
3/4 roll crushed Ritz crackers

Directions:
Directions:
Saute' onions in stick of margarine until translucent and tender. Remove from heat and place in a large mixing bowl. Add eggs, milk, soup and cheese. Mix well. Divide into pie shells. Top with crackers mixed with 2 tbsp. margarine. Bake 350 for 30-35 min.
