4 large Vidalia onions, chopped (medium chunks)
1 stick margarine
1/2 can cream of mushroom soup
2 eggs
1/2 cup milk
salt & pepper to taste
2 cups shredded cheese

Topping:

1/4 roll crushed Ritz crackers
1 tbsp. margarine

Directions:
Directions:
Saute' onions in margarine. Spray 8x11in. casserole dish. In a large mixing bowl mix onions and margarine with soup, milk, eggs and 1 1/2 cup of the cheese. Season with salt & pepper. Mix well & pour in casserole dish. Top with remaining cheese and buttered bread crumbs. Bake 350 uncovered for 30 min.
