4 cups shredded zucchini
1 medium onion, chopped fine
1 1/2 cup shredded cheese
3/4 cup Parmesan cheese
1 cup Bisquick
1 tsp. oregano
1 tsp. salt

Topping:

3 eggs
1/2 cup vegetable oil


Directions:
Directions:
Mix all ingredients together and pour into a sprayed casserole dish. Beat the 3 eggs & 1/2 oil together and pour over casserole. Bake uncovered at 350 for 40-45 min.

This is one of my favorite zucchini dishes. Note: Zucchini can be sandy so wash & scrub well before shredding.
