1/2 tsp. grated lemon rind
1/4 cup lemon juice
1 pkg.[7g.] unflavored gelatin
1/2 cup sugar
2 cups [500g.] quark cheese
1/4 cup light cream cheese
1 tsp. vanilla
mint sprigs

Blueberry Sauce:
recipe follows
1/4 cup sugar
1/4 cup orange juice
2 tsp cornstarch
1 cup blueberries

Directions:
Directions:
In a small saucepan, stir together lemon rind, lemon juice & 2 tbsp. water.; sprinkle gelatin over top. Let stand for 1 min; cook, stirring over low heat for 3 min. or until gelatin is dissolved. Stir in sugar until dissolved. Let cool 5 min.
In bowl, beat together quark & cream cheese. Beat in gelatin mixture & vanilla until smooth. Divide among 6 custard cups or moulds. Refrigerate for at least 12 hours .
To serve, run knife around edge of each custard cup; invert onto individual plates. Serve with Blueberry Sauce & garnish with mint.

Blueberry Sauce:
In small saucepan; bring sugar & orange juice to boil, stirring to dissolve sugar. Blend cornstarch with 2 tbsp water; stir into saucepan along with blueberries. Cook, stirring, for 2 min. or until boiling & thickened. Makes about 1 cup.
