2 each green & gold zucchini
2 tbsp. olive oil
2 cloves garlic, minced
1/4 cup pine nuts or almonds
1/4 cup chopped fresh basil
1/4 cup grated parmesan cheese
salt& pepper

Directions:
Directions:
Using vegetable peeler, pare zucchini lenghtwise into ribbons. In skillet cover & cook zcchini & 2 tbsp. water over medium-high heat for 3 min. or just until tender-crisp; drain & set aside.
Wipe out skillet & heat oil over medium heat; cook garlic & pine nuts for 1 min. or just until heated through. Sprinkle with parmesan. Season with salt & pepper to taste.
