1 large cucumber
1- 4oz. pkg. cream cheese
1 tbsp. blue cheese
1 tsp. grated onion
2 tsp. dry parsley
1/2 tsp. dillweed [not seed ]
pimento pieces

Directions:
Directions:
Score peel of clean cucumber lenghtwise with tines of fork. Cut 1" from ends. Scoop out seeds. A spoon or melon baller works well & work from both ends. Place so it can drain. Gently wipe out with paper towel. Combine other ingredients. Spoon into cucumber until well packed. Wrap in plastic & refrigerate 3-4 hours. Place pimento on top.
