Ingredients: 1/2 Cup Cooking Oil 3/4 Cup Sugar 2 Eggs 1/2 Cup Mashed Ripe Banana (1-1 1/2 Medium) 1/2 Tsp. Almond Extract 1 Can (11 0z.) Mandarin Oranges, Drained 1-1/2 Tsp. Grated Orange Peel 1-3/4 Cup Unsifted All-Purpose Flour 1/2 Tsp. Soda 3/4 Cup Salt 1/2 Cup Flaked Coconut 1-2 Tbsp. Graham Cracker Crumbs

Directions:Blend together oil and sugar in large bowl. Add eggs, one at a time, beating well after each. Stir in banana and almond extract. Cut oranges into pieces and add to banana mixture. Stir in remaining ingredients except Graham Cracker crumbs. Mix well. Grease bottom and sides of 8"x4" or 9"x5" (1-1/2 Qt.) loaf dish. Sprinkle with Graham Cracker crumbs. Shake our excess crumbs. Pour batter into dish, spreading evenly. Bake 55 minutes at 325 degrees.
Microwave: Mix as for regular oven (use plastic or glass loaf dish). Microwave medium (50%) uncovered 10 minutes, rotate dish, microwave high 3-4 minutes. Let cool 10 minutes in pan. |
