3-4 roma tomatoes
1 cucumber, peeled and seeded
1/2 medium red onion, sliced thin
6 oz part skim mozzarella cheese
4 oz feta cheese
1/4 cup basil, roughly chopped
2 tbsp parsley, chopped
2-3 cloves garlic, minced
1/4 cup olive oil
2 tbsp lemon juice
1 tbsp red wine vinegar
1 tbsp fresh ground pepper
1 tsp oregano
1 tsp thyme
1 tsp garlic powder

Directions:
Cut tomatoes and cucumber in 1 inch chunks and place in large bowl. Add sliced onions, garlic, basil and parsley to bowl. Cut mozzarella and feta cheese into 1/2 inch pieces and add to bowl. In small bowl whisk together remaining ingredients. Add dressing to large bowl and stir until well blended
