1 and 1/2 lb. unpeeled, large fresh shrimp
1 c. fresh cilantro leaves
3 green onions, cut in thirds
1/4 c. freshly grated Parmesan cheese
1/2 small jalapeno pepper
1 or 2 medium tomatoes
2 T. pine nuts, toasted
3 T. fresh lemon juice
1 tsp. minced garlic
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. olive oil, divided

Directions:
Directions:
1) Peel and devein shrimp. Set aside.
2) Process cilantro, next 9 ingredients, and 3 T. olive oil in a food processor until smooth.
3)Saute shrimp in remaining 1 T. hot oil in a large skillet over medium-high heat 3 to 4 minutes or just until shrimp turn pink. Pour cilantro mixture over shrimp, stirring well. Serve shrimp over hot rice.
