2 1/2 lbs of carrots sliced
3/4 cup mayonnaise
1 tbsp minced onion
2 tbsp horseradish
salt and pepper
seasoned breadcrumbs
1 tbsp butter
dried parsley flakes

Directions:
Directions:
Cook carrots and reserve 3/4 cup liquid. Mix carrot liquid with the mayo, onion,horseradish ,salt and pepper.. Pour over the carrots in a shallow 9 in pan. Sprinkle with bread crumbs and parsley.Dot top with butter. Bake at 375f or 30 minutes.
