Butter
1 large onion
3 c. chopped celery
Turkey liver, cooked and finely chopped, optional
2 loafs of stuffing bread
Chicken stock
Salt and pepper
Poultry seasoning

2 eggs, beaten
Parsely, finely chopped

Directions:
Directions:
Saute onion and chopped celery in 1-2 T. butter. Add the chopped turkey liver, if desired. Remove onion mixture from heat and set aside.
Lightly moisten slices of bread with chicken stock. Squeeze out excess moisture, you don't want your bread to be too wet. Crumble moistened bread into melted butter in a large stovetop pan. Brown lightly. Combine the onion mixture and the lightly browned bread; add salt, pepper and poultry seasoning to taste. Mix thoroughly, add 2 beaten eggs (1 egg for a small amount of dressing). Add parsely and mix everything well.
Place dressing in ovenproof baking dish. Dot the top with a little butter and paprika.
Bake at 350 until hot.

I cook small amounts of the bread stuffing on the stove at a time. When it is done I add it to the onion mixture that was set aside. Eventually, it will all be mixed together.
