1 cup + 2 Tbsp. butter (I use oil and yogurt)
2 cups brown sugar
2 eggs (or egg substitute)
4 tsp. vanilla
3 cups oats (quick, regular, or steel cut)
2 1/2 cups flour
1 1/2 tsp. salt
1 tsp. baking soda

Mix above together. Bake in a greased 9x13 pan, 350 degrees for 25 minutes.
As soon as baked, spread 2 cups chocolate chips on top, sprinkle with 1 cup walnuts

Can add peanut butter to the mixture before baking
Don't need the nuts
Can add 1 can sweetened condensed milk to the chocolate chips, mix in a pan until melted, then spread over cookie bars.
