1 egg plant, cut up
1/2 c. chopped onion
1 bell pepper, chopped
1 tomato or Pimento chopped
2 eggs beaten
1/2 stick margarine
1/2 c. grated cheddar cheese
1 c. crushed saltine crackers
1 can cream of Mushroom soup

Directions:
Directions:
Boil egg plant in water and lemon juice 10 minutes, drain. Add other ingredients and mix well. Pour into casserole. Sprinkle top with Parmesan cheese. Bake at 350 degrees for 30 minutes.
