Desired number of chicken breasts marinated overnight in olive oil and fresh thyme.
sweet, red, and yukon gold potatoes, thinly sliced.
sprig of fresh thyme
heavy cream
butter
Tin Foil (heavy duty)

Directions:
I am not giving amounts for the ingredients because it depends largely on the number of tin foil dinners you are making. I generally use one chicken breast per person or one breast for two kids. For five people I use 2-3 of each kind of potato, one sprig of thyme per person, 2-3 T. cream per person, and 1 T. or less butter per person.

To assemble:
Make a tin foil square for each dinner you are making.
Add one breast of marinated chicken to each dinner.
Top chicken with several slices of each potato variety.
Add fresh sprig of Thyme.
Drizzle with cream.
Add a pat of butter.

Wrap the dinner so it is completely sealed. You may need to double wrap with another layer of tin foil. Cook in the hot coals of a campfire until chicken is done and potatoes are tender. You may also bake these in an oven at 350º until done.

This is a tasty variation to the standard tin foil camp dinner. I usually cook the chicken (or cube the raw chicken) ahead of time so that it will cook a little faster on the fire.
