1/4 lb. Asparagus, remove ends and cut in half
1/2 lb. Broccolini
1/4 French String Beans
1/4 Sugar Snap Peas
Butter - 2 tbsp.
Olive Oil - 1 tbsp.
2 Shallots, diced
Salt and Pepper

Directions:
Directions:
Bring large pot of salted water to a boil and blanch broccolini, remove and place in ice water.
Use same boiling water to blanch in succession the sugar snap peas, asparagus, and French green beans.
Remove each veggie and add to the ice water.

In large saute pan or pot, melt butter and oil and saute the shallots until soft and slightly browned.
Add in veggies (drained well) and saute until heated through. Salt and Pepper to taste.
