Filling -
1 1/2lbs sausage cooked and sliced thin (can do day before so it is cool)
1 1/2lb prosciutto - sliced thin
1 basket cheese - sliced (find in Italian deli )
1/4C grated cheese
11 eggs
salt & pepper to taste

Crust - buy pie crust need enough for large pan & strips on top

Pre heat oven 350.

Beat eggs until fluffy -do this in front of TV because it take a long time - have patience
Add sausage, grated cheese, salt & pepper - DO NOT OVER STIR
Roll out dough and line lasagna size Pyrex-DO NOT GREASE PAN
Add egg mixture first then layer of prosciutto
then cheese. Continue making layers ending with cheese
Add strips of dough on top

Five minutes before the end of the baking time, remove them from the oven, brush with olive oil

About 1 hour ,until a light golden brown.

Lent is a time of penance; this pie, chock full of all kinds of rich ingredients, is the sign that Lent is over and Easter has arrived at last. Traditionally made on Good Friday but not enjoyed till Easter, Great Grandma made two or three every Easter
