1-1/4 cups chopped onion

2-1/2 cloves garlic, chopped
3 tablespoons and 1 teaspoon honey
3 tablespoons and 1 teaspoon light brown sugar
3 tablespoons and 1 teaspoon Worcestershire sauce
1-1/4 teaspoons chili powder
2-1/2 teaspoons hot pepper sauce (such as Tabasco®), or to taste
salt and ground black pepper to taste
7/8 (3 pound) pork shoulder roast
