3 3/8 c. of white sugar
1 c. water
1 ½ c. of white corn syrup
1 tsp. cinnamon, peppermint or spearmint oil
Red food coloring for cinnamon (green for spearmint or peppermint)
Confectioner’s sugar

Directions:
Directions:
Grease a large cookie sheet and sprinkle with confectioner’s sugar. Combine sugar, water and syrup in a large saucepan over medium heat. Stir constantly until sugar is dissolved. Stop stirring and place a candy thermometer in syrup mixture (do not stir) and boil until it reaches 260 degrees. Drop in several drops of food coloring to desired color. Do not stir. Boiling action will mix the food coloring. Continue to boil until it reaches 300 degrees.

Carefully remove from heat and add flavored oil. Stir in quickly and pour over the greased and sugared cookie sheet. Top with additional confectioner's sugar. Let candy cool until hard. Break into pieces.
