1 chicken
1/4 cup oil
1/4 cup vinegar (opt.)
2 12oz. cans of beer
2 tsp. Tai and Tony Cacheras (Creole Seasoning)
1/2 med. onion chopped real good
4 cloves garlic crushed

The night before rub outside of chicken and under skin
with Tai seasoning and Tony Cacheras. Inject one can
of beer, oil and venegar in legs, breast, and thighs and
refrigerate overnight.
The next day open second beer can drink half and cut
top off with can opener. Add chopped onion and garlic
and sit chicken on top of can. Cook on smoker for 3 1/2
- 4 hours. Let sit 5 - 10 min. Cut up and serve.
