Ingredients: 1 c. (2 sticks) margarine softened 1 c. firmly packed brown sugar 1/2 c. granulated sugar 4 egg whites or 2 eggs, slightly beaten (or 1/2 c. egg beaters) 2 tbsp. low-fat or skim milk 2 tsp. vanilla 3 c. Quaker Multigrain Hot Cereal (oatmeal works fine too) 1 3/4 c. all purpose flour 1 tsp baking soda 1 1/2 c. raisins or dried fruit of choice (dried cherries, or diced dried apricots or peaches are great) 1/2 c. coarsely chopped nuts (optional)

Directions:Heat oven to 350º. Beat margarine and sugars until fluffy. Beat in eggs, milk, and vanilla. Add combined dry ingredients and mix well. Stir in fruit and nuts. Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake 10-12 minutes or until light golden brown. Cool one minute on cookie sheet., then remove to wire rack. Cool completely. Store tightly covered. |

Notes: Some great mix in combos are: dried cherries, walnuts, and white chocolate chips / dried apricots or peaches - diced, pecans, and white chocolate chips / dried blueberries, almonds, and dark chocolate chunks. This was given to me as a Christmas present. All of the dry ingredients were already mixed in a mason jar with the recipe and a ribbon tied around the jar!
