BBQ Tempeh Recipe

1 package tempeh
7 T barbeque sauce
3 tsp. ketchup
1 red onion, sliced
1 green or red pepper, cut into ½” slices
1 C vegetable broth
¼ C canola oil

Directions:
Directions:
Remove tempeh from package and cut into 1” strips.

Add tempeh and vegetable broth to a saucepan and let boil for 3 – 5 minutes. Drain the broth and put tempeh aside.

Coat a glass baking pan with canola oil. Add tempeh, onions, pepper, barbeque sauce and ketchup. Using two tablespoons, toss the sauces with the tempeh and vegetables together in the pan until they are all well coated.

Bake for ½ hour at 425 degrees. Check occasionally and toss every 15 minutes to make sure all parts are coated and cooking evenly.

Serve on a bed of rice or with mashed potatoes.

Tempeh is fermented soybean cake. It is a traditional soy product and healthy and versatile. Tempeh picks up the flavor of the foods with which it is cooked.
