2lbs. red kidney beans
2 med. onions, chopped
1 bell pepper, chopped
2 stalks celery, chopped
1 1/2 - 2 lbs smoked sausage
2-3 cups cooked rice
1 bay leaf
1 can tomato sauce ( or juice)
1 tsp. garlic powder
Salt
Tony's Creole seasoning

Directions:
Directions:
Soak beans overnight (or at least 6 hours). Drain
water; rinse beans well and pick out any bad beans. In
large Dutch oven - add beans and enough water to
cover beans plus 1". Heat on high heat. When foam
appears, drain all water; rinse and add same amount of
water as before. Add all vegetables, seasonings, and
tomato sauce. Cook on low heat until beans are
mashable. Add sliced, cooked sausage and cook a
while longer. Serve over rice. Freeze any leftovers.
