2 green peppers, (or any color) chunked
6 zucchini, sliced
2 large eggplants, chunked
4 cloves garlic, crushed
3 celery stalks, sliced thin
1 cup tomatos, chopped
(or canned with juice)
1 T basil
1 T oregano
2 T chopped parsley

Directions:

Place all ingredients in a large pot.
Cook over medium-low heat about 60 minutes,
(or to desired doneness)
Stir occasionally.
Serve hot or cold
