Directions:
Beat eggs, add milk, sugar, salt, and enough flour to make as thick as pancake batter. Preheat cast iron frying pan with oil to point where drop of water sizzles. Pour batter into frying pan and let set for a short time and then begin to gently stir batter until it gets dry. Break up the cooked batter with a fork and a spoon and lower the heat so that it doesn't burn. Continue breaking up into pieces and cooking until they are nicely browned. Pieces should be no smaller than the size of a large marble.

Salad: Fresh leaf lettuce broken into bite size pieces, sprinkle each layer with a little sugar (1/4 c. total). Spinach and other varieties of leaf lettuce can also be used. 1 c half and half; add 1 tbsp vinegar and let set for a short time until it starts curdling; add sugar to taste and pour over lettuce.
