3 large eggs
1 tsp baking powder
1/2 tsp salt
Black Pepper to taste
1 small onion(finely chopped)
4 Tbsps Parsley( finely chopped)
2 ozs Cheddar cheese (grated)

Directions:
Directions:
Preheat oven to 350º. Grease hollows of muffin tins
Beat the eggs, baking powder salt and pepper. Add the onion and half the parsley. Spoon the mixture into the muffin tins 3/4 full. Bake for about 5-10 mins or until set Sprinkle with cheese and about 2 mins before removing from oven sprinkle with parsley.
