2 1/2 lb pork butt, or beef round tip roast
Sauce:
Cheesecloth or herb bag
1 lg bottle catsup
11/2 c. chili sauce
2 T. sugar
1 1/2 t. dry mustard
1 tsp. mixed pickling spice
1 tsp. fresh gr. black pepper
1 small green pepper, chopped fine
1 large onion, diced

Simmer pork roast 3 hours until tender. Beef roast can be roasted 325º uncovered, in oven (20 minutes per pound for medium rare). For cheaper beef roast, braise on stove with added water, covered.
Sauce: Combine sauce ingredients. Tie pickling spices inside cheesecloth, add to sauce. Simmer slowly about 45 minutes. Remove pickling bag.
Shred or slice thin meat. Add to sauce.
Serve hot over buns with cold pickle chips.
Can be made ahead and refrigerated.
