Barbecue Sauce

2 cloves garlic
1/2 c. Virgina Dare white wine or any white wine
of your choice
4 TBSP grated fresh ginger
1/4 cup honey
1/2 cup soy sauce

Spare Ribs:
1 pound ribs for each serving cut in long thin strips for spit roasting
Precook ribs in pot with onion stock
2 cloves
1 bay leaf
2 cloves garlic
1 tsp salt for each 2 pounds of ribs

Directions:
Directions:
Add ribs to liquid and seasoning, adding water to barely cover ribs. Simmer slowly for about 1 hour or until almost done. Remove ribs and cool.

Brush meat with barbecue mixture and let stand 1-3 hours. Broil over charcoal brushing with more sauce 2-3 times during cooking
