Ingredients: 2 c. sugar 2 c. flour 1 t. baking soda 1/2 t. salt 2 sticks oleo 5 T. cocoa 1 c. water 2 well beaten eggs 1/2 c. buttermilk* 1 t. vanilla
FOR ICING
1 stick oleo 5T. cocoa 6 T. buttermilk* 1 t. vanilla 1 box powdered sugar (see directions below)
*For the buttermilk, I use 1 c. sweet milk and 1 T vinegar

Directions:Sift all dry ingredients together. Heat to boiling 2 sticks oleo; 5 T. cocoa & 1 c. water. Pour over the dry ingredients and mix well. Pour into a large greased pan (at least 12"x13" or larger, if you have one. Bake at 350 degrees for 20 minutes. Cool before icing. FOR THE ICING, bring to a boil 1 stick oleo; 5 T. cocoa; 6 T. buttermilk; 1 t. vanilla and ADD almost 1 box of powdered sugar to the right consistency to spread over the cake. Add nuts, if desired. (I did not use a whole box of powdered sugar) |

Notes: Every time my family went on a road trip when Jean, Joe & John were kids, Mabel would make the Cookie Sheet Cake and send the whole pan with us. Several times she would just make it if she knew the kids would be coming home. Mabel Miller was my boss at Lay Bonded Abstract Company..... Mabel was a good boss and a good friend.
