5 lb. pork loin roast
1/2 cup brown sugar
2 tbsp. rum
2 garlic cloves, minced
1 tsp. lime zest
1 tsp. ground ginger
1/4 tsp. ground cloves
1 bay leaf, crumbled
1/4 tsp. salt
dash pepper

Directions:
Directions:
Make 1" slits all over the roast. Combine remaining ingredients and spoon 1/2 tsp. into each slit. Grill on a rack on medium-low heat, with grill covered, for about 2 hours or until meat reaches 160º. Spread remaining sauce over top of roast and grill 10 - 15 minutes more until meat reaches 170º.
