Rum-Cran-Apple Pie Recipe

2 cups fresh cranberries
3/4 cups fresh apple cider
1 cup sugar
2 tbsp. cornstarch
1/2 tsp. pumpkin pie spice
3 tbsp. dark rum
3 large apples (macintosh or empire), peeled an cored
pastry for 2 crusts
1 tbsp. butter

Directions:
Directions:
Preheat oven to 375º. In a saucepan combine berries and cider. Simmer and stir until berries pop. Combine sugar, cornstarch and pumpkin pie spice. Stir into hot cranberries and simmer til it thickens (1 minute). Remove from heat. Cool. Stir in rum and apple. Pour into cooked pie shell. Dot with butter. Top crust. Bake 1 hour. Serve with ice cream.

Don't worry about the alcohol in the rum. At that heat all the alcohol evaporates leaving only the flavor.
