1 fresh beef brisket (about 2 lbs)*
2 T. vegetable oil
1 c. hot water
1 envelope beefy onion soup mix
2 T. cornstarch
1/2 c. cold water

Directions:
Directions:
Brown brisket in oil on both sides over medium-high heat; drain oil. Place in roasting pan. Combine hot water and soup mix; pour over brisket. Cover and bake at 325 degrees for 2 to 2 1/2 hours or until meat is tender. Remove brisket. Let stand for 10-15 minutes before slicing. Combine cornstarch and cold water, stir until smooth and gradually stir into pan juices. Bring to a boil cook and stir until thickened. Thinly slice meat across the grain and serve with the gravy. Serve with cooked noodles or mashed potatoes. *Use a fresh brisket, not corned beef.
