1 c. butter, softened
1 c. sugar
6 egg yolks
3 c. flour
1 tsp vanilla or lemon extract
3 egg whites
1/2 c. finely chopped walnuts
Directions:
Directions:
Cream butter and sugar, add egg yolks, extract and flour. In a separate bowl beat egg whites until stiff. Roll out dough 1/4 inch thick. Cut out with round cookie cutters. Brush top of each cookie with beaten egg white and sprinkle with chopped nuts. Bake on cookie sheet at 375 degrees for 12-15 minutes. Makes 36 cookies.

Variation: Sandwich cookies can be made by spreading a thin layer of strawberry or apricot jam and sandwiching cookies. Omit egg white topping on bottom half of sandwich cookies. Some cooks also use a small heart cookie cutter and cut out a heart on the top sandwich cookie so the pretty jam shows through when you sandwich them. Instead of using the egg white/nut garnish, sprinkle lightly with granulated sugar.
