5# beef rump roast
6 medium red potatoes, halved
6 large carrots, chunked
6 ribs celery, chunked

Directions:
Directions:
Place beef in heavy, greased dutch oven in 425 degree oven.
Roast for one hour.
Reduce heat to 400, cover roast and bake for one more hour.
Add remaining ingredients, cover and bake one more hour.
Salt and pepper to taste when putting on serving dish.
